Savory Southern Dirty Rice with Sausage is a flavorful dish that combines rice with smoked sausage and a mix of vegetables, seasoned to perfection.


Ingredients

  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 8 ounces smoked sausage, sliced
  • 1 tablespoon vegetable oil
  • 1 small onion, diced
  • 1 green bell pepper, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon cayenne pepper (optional for heat)
  • 2 green onions, sliced (for garnish)

Instructions

  1. Rinse the rice under cold water until the water runs clear. Drain and set aside.
  2. In a large skillet, heat the vegetable oil over medium heat. Add the sliced sausage and cook until browned, about 5 minutes.
  3. Add the diced onion, bell pepper, celery, and minced garlic to the skillet. Sauté for about 5-7 minutes, or until the vegetables are softened.
  4. Stir in the rinsed rice, chicken broth, Cajun seasoning, black pepper, salt, and cayenne pepper (if using). Bring to a boil.
  5. Once boiling, reduce the heat to low, cover the skillet, and simmer for 20-25 minutes, or until the rice is tender and the liquid is absorbed.
  6. Remove from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork and garnish with sliced green onions before serving.

Notes

  • For added flavor, consider adding a bay leaf while cooking the rice, and remove it before serving.
  • Substitute the smoked sausage with ground turkey or chicken for a lighter option, or use a plant-based sausage for a vegetarian version.
