- 1 cup long-grain white rice
- 2 cups chicken broth
- 8 ounces smoked sausage, sliced
- 1 tablespoon vegetable oil
- 1 small onion, diced
- 1 green bell pepper, diced
- 2 stalks celery, diced
- 3 cloves garlic, minced
- 1 teaspoon Cajun seasoning
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1/4 teaspoon cayenne pepper (optional for heat)
- 2 green onions, sliced (for garnish)
Instructions
- Rinse the rice under cold water until the water runs clear. Drain and set aside.
- In a large skillet, heat the vegetable oil over medium heat. Add the sliced sausage and cook until browned, about 5 minutes.
- Add the diced onion, bell pepper, celery, and minced garlic to the skillet. Sauté for about 5-7 minutes, or until the vegetables are softened.
- Stir in the rinsed rice, chicken broth, Cajun seasoning, black pepper, salt, and cayenne pepper (if using). Bring to a boil.
- Once boiling, reduce the heat to low, cover the skillet, and simmer for 20-25 minutes, or until the rice is tender and the liquid is absorbed.
- Remove from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork and garnish with sliced green onions before serving.
Notes
- For added flavor, consider adding a bay leaf while cooking the rice, and remove it before serving.
- Substitute the smoked sausage with ground turkey or chicken for a lighter option, or use a plant-based sausage for a vegetarian version.
