- 1 cup sushi rice
- 1 ¼ cups water
- 1 pound salmon fillet
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 tablespoon sesame oil
- 1 teaspoon garlic powder
- 1 teaspoon ginger powder
- 1 avocado, sliced
- 1 cup cucumber, thinly sliced
- 2 green onions, chopped
- 1 tablespoon sesame seeds
- Salt and pepper to taste
Instructions
- Rinse the sushi rice under cold water until the water runs clear. Combine the rice and water in a medium saucepan and bring to a boil. Once boiling, reduce heat to low, cover, and simmer for 18-20 minutes or until the water is absorbed. Remove from heat and let it sit covered for 10 minutes. Fluff with a fork before serving.
- While the rice is cooking, preheat your oven to 400°F. Line a baking sheet with parchment paper.
- In a small bowl, whisk together soy sauce, honey, sesame oil, garlic powder, ginger powder, salt, and pepper. Place the salmon fillet on the prepared baking sheet and brush the mixture over the top of the salmon.
- Bake the salmon in the preheated oven for 12-15 minutes, or until it flakes easily with a fork. Remove from the oven and let it rest for a few minutes.
- To assemble the bowls, divide the cooked rice among four bowls. Top each bowl with a piece of salmon, sliced avocado, cucumber, and green onions. Sprinkle sesame seeds on top for garnish.
- Serve immediately and enjoy your delicious salmon rice bowl!
Notes
- For added flavor, marinate the salmon in the soy sauce mixture for 30 minutes before baking.
- Substitute the salmon with grilled chicken or tofu for a different protein option.
