- 1 can (14.75 ounces) salmon, drained and flaked
- 1/2 cup breadcrumbs
- 1/4 cup mayonnaise
- 1/4 cup finely chopped onion
- 1/4 cup finely chopped bell pepper (any color)
- 1 large egg
- 1 teaspoon Dijon mustard
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped (optional)
- 2 tablespoons olive oil (for frying)
Instructions
- In a large mixing bowl, combine the flaked salmon, breadcrumbs, mayonnaise, chopped onion, chopped bell pepper, egg, Dijon mustard, garlic powder, salt, black pepper, and parsley (if using). Mix until well combined.
- Shape the mixture into patties, about 2-3 inches in diameter. You should have approximately 6-8 patties.
- Heat the olive oil in a large skillet over medium heat. Once hot, add the patties to the skillet, making sure not to overcrowd the pan. Cook for about 4-5 minutes on each side or until golden brown and cooked through.
- Remove the patties from the skillet and place them on a paper towel-lined plate to absorb any excess oil.
- Serve warm with your choice of dipping sauce or on a bun as a sandwich.
Notes
- For a spicier kick, add a teaspoon of hot sauce to the mixture before forming the patties.
- Substitute canned tuna for salmon if desired, or use fresh cooked salmon for a different flavor profile.
