Ingredients

  • 1 can (14.75 ounces) salmon, drained and flaked
  • 1/2 cup breadcrumbs
  • 1/4 cup mayonnaise
  • 1/4 cup finely chopped onion
  • 1/4 cup finely chopped bell pepper (any color)
  • 1 large egg
  • 1 teaspoon Dijon mustard
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (optional)
  • 2 tablespoons olive oil (for frying)

Instructions

  1. In a large mixing bowl, combine the flaked salmon, breadcrumbs, mayonnaise, chopped onion, chopped bell pepper, egg, Dijon mustard, garlic powder, salt, black pepper, and parsley (if using). Mix until well combined.
  2. Shape the mixture into patties, about 2-3 inches in diameter. You should have approximately 6-8 patties.
  3. Heat the olive oil in a large skillet over medium heat. Once hot, add the patties to the skillet, making sure not to overcrowd the pan. Cook for about 4-5 minutes on each side or until golden brown and cooked through.
  4. Remove the patties from the skillet and place them on a paper towel-lined plate to absorb any excess oil.
  5. Serve warm with your choice of dipping sauce or on a bun as a sandwich.

Notes

  • For a spicier kick, add a teaspoon of hot sauce to the mixture before forming the patties.
  • Substitute canned tuna for salmon if desired, or use fresh cooked salmon for a different flavor profile.
