Savory Breakfast Pop Tarts are a delicious and hearty twist on the classic pastry, filled with cheese, sausage, and scrambled eggs.


Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 cup unsalted butter, chilled and cubed
  • 6 to 8 tablespoons ice water
  • 1 cup shredded cheddar cheese
  • 1 cup cooked and crumbled breakfast sausage
  • 1/2 cup scrambled eggs
  • 1/4 teaspoon black pepper
  • 1 egg, beaten (for egg wash)

Instructions

  1. In a large bowl, combine the flour, salt, and sugar. Add the chilled butter and mix until the mixture resembles coarse crumbs.
  2. Gradually add the ice water, one tablespoon at a time, mixing until the dough comes together. Divide the dough in half, shape into disks, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  3. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
  4. On a floured surface, roll out one disk of dough to about 1/8-inch thick. Cut into rectangles, approximately 4×6 inches. Repeat with the second disk.
  5. On half of the rectangles, layer the cheddar cheese, breakfast sausage, and scrambled eggs. Sprinkle with black pepper.
  6. Place the remaining rectangles on top of the filled ones and press the edges to seal. Use a fork to crimp the edges and create a decorative pattern.
  7. Brush the tops with the beaten egg. Cut a few small slits in the top of each pop tart to allow steam to escape.
  8. Bake for 25-30 minutes, or until golden brown. Let cool slightly before serving.

Notes

  • For a spicier version, add diced jalapeños to the filling.
  • You can also substitute the breakfast sausage with cooked bacon or ham for a different flavor.
