Description

Delicious and visually stunning Red, White, and Blue Cheesecake Parfaits, perfect for summer gatherings and celebrations.


Ingredients

  • 1 cup graham cracker crumbs
  • 4 tablespoons unsalted butter, melted
  • 2 tablespoons sugar
  • 1 (8-ounce) package cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 1 cup fresh strawberries, hulled and sliced
  • 1 cup fresh blueberries
  • 2 tablespoons fresh lemon juice

Instructions

  1. In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Mix until well combined. Press the mixture into the bottom of serving glasses or bowls to form a crust layer.
  2. In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add the powdered sugar and vanilla extract, mixing until well blended.
  3. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
  4. Layer the cheesecake mixture over the graham cracker crust in each glass, followed by a layer of sliced strawberries, then a layer of blueberries. Repeat the layers until the glasses are filled, finishing with a layer of berries on top.
  5. Drizzle fresh lemon juice over the top layer of berries for added flavor.
  6. Chill the parfaits in the refrigerator for at least 2 hours before serving to allow the flavors to meld.

Notes

  • For a lighter version, substitute the heavy cream with Greek yogurt.
  • You can also add a layer of banana slices for extra flavor and texture.
