- 1 cup graham cracker crumbs
- 4 tablespoons unsalted butter, melted
- 2 tablespoons sugar
- 1 (8-ounce) package cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
- 1 cup fresh strawberries, hulled and sliced
- 1 cup fresh blueberries
- 2 tablespoons fresh lemon juice
Instructions
- In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Mix until well combined. Press the mixture into the bottom of serving glasses or bowls to form a crust layer.
- In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add the powdered sugar and vanilla extract, mixing until well blended.
- In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
- Layer the cheesecake mixture over the graham cracker crust in each glass, followed by a layer of sliced strawberries, then a layer of blueberries. Repeat the layers until the glasses are filled, finishing with a layer of berries on top.
- Drizzle fresh lemon juice over the top layer of berries for added flavor.
- Chill the parfaits in the refrigerator for at least 2 hours before serving to allow the flavors to meld.
Notes
- For a lighter version, substitute the heavy cream with Greek yogurt.
- You can also add a layer of banana slices for extra flavor and texture.
