No-Bake Chocolate Oatmeal Bars are easy, healthy treats made with rolled oats, peanut butter, honey, and cocoa powder, perfect for a quick snack or dessert.

- 2 cups rolled oats
- 1 cup creamy peanut butter
- 1/2 cup honey
- 1/2 cup unsweetened cocoa powder
- 1/2 cup chocolate chips
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
Instructions
- In a large mixing bowl, combine the rolled oats, cocoa powder, and salt. Stir until well mixed.
- In a small saucepan over low heat, combine the peanut butter and honey. Stir until melted and smooth. Remove from heat and stir in the vanilla extract.
- Pour the peanut butter mixture over the dry ingredients in the mixing bowl. Stir until everything is well combined and the oats are evenly coated.
- Fold in the chocolate chips until evenly distributed.
- Line an 8×8 inch baking dish with parchment paper, leaving some overhang for easy removal. Press the mixture firmly into the bottom of the dish, smoothing the top with a spatula.
- Refrigerate for at least 1 hour to set. Once firm, lift the bars out using the parchment paper and cut into squares.
Notes
- For a nut-free version, substitute peanut butter with sunflower seed butter.
- You can also add dried fruits or seeds for extra texture and flavor.
- For a sweeter bar, increase the honey to 2/3 cup.
