Ingredients

  • 2 cups cooked quinoa
  • 1 pound boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1 cup feta cheese, crumbled
  • 1/4 cup Kalamata olives, pitted and sliced
  • 1/4 cup fresh parsley, chopped
  • Juice of 1 lemon

Instructions

  1. Preheat your grill or grill pan over medium-high heat.
  2. In a small bowl, mix together olive oil, garlic powder, oregano, paprika, salt, and pepper.
  3. Brush the mixture over the chicken breasts, ensuring they are well coated.
  4. Grill the chicken for about 6-7 minutes on each side, or until fully cooked and the internal temperature reaches 165°F. Remove from the grill and let it rest for 5 minutes before slicing.
  5. In a large bowl, combine the cooked quinoa, cherry tomatoes, cucumber, red onion, feta cheese, olives, and parsley.
  6. Drizzle the lemon juice over the quinoa mixture and toss gently to combine.
  7. Serve the quinoa salad in bowls topped with sliced grilled chicken.
