- 8 large eggs
- 1 cup milk
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried oregano
- 1 cup diced bell peppers (red, green, or yellow)
- 1 cup diced tomatoes (fresh or canned)
- 1 cup baby spinach, chopped
- 1/2 cup crumbled feta cheese
- 1/2 cup diced red onion
- 1/2 cup sliced black olives
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 350°F. Grease a 9×13 inch baking dish with olive oil.
- In a large mixing bowl, whisk together the eggs, milk, salt, pepper, and oregano until well combined.
- Add the diced bell peppers, tomatoes, spinach, feta cheese, red onion, and black olives to the egg mixture. Stir until all ingredients are evenly distributed.
- Pour the mixture into the prepared baking dish, spreading it out evenly.
- Bake in the preheated oven for 30-35 minutes, or until the eggs are set and the top is lightly golden.
- Remove from the oven and let it cool for 5 minutes before slicing. Serve warm.
Notes
- For added flavor, consider adding cooked sausage or bacon to the mixture before baking.
- You can also substitute the feta cheese with goat cheese for a different taste.
