- 1 cup cherry tomatoes, halved
- 1/2 cup grated Parmesan cheese
- 1/4 cup extra virgin olive oil
- 2 tablespoons fresh lemon juice
- 1 teaspoon Dijon mustard
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 1/4 cup toasted pine nuts (optional)
Instructions
- In a large bowl, combine the chopped romaine lettuce and halved cherry tomatoes.
- In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, garlic powder, salt, and pepper until well combined.
- Pour the dressing over the lettuce and tomatoes, tossing gently to coat evenly.
- Add the grated Parmesan cheese and toasted pine nuts (if using) to the salad, tossing lightly to combine.
- Serve immediately for the freshest taste, or chill in the refrigerator for up to 30 minutes before serving for a cooler option.
