Ingredients

- 4 cups kale, stems removed and chopped
- 1/4 cup grated Parmesan cheese
- 1/4 cup extra virgin olive oil
- 2 tablespoons fresh lemon juice
- 1 teaspoon lemon zest
- 1 teaspoon Dijon mustard
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 1/4 cup toasted pine nuts (optional)
Instructions
- In a large bowl, combine the chopped kale and a pinch of salt. Massage the kale with your hands for about 2-3 minutes until it becomes tender and slightly wilted.
- In a small bowl, whisk together the olive oil, lemon juice, lemon zest, Dijon mustard, garlic powder, salt, and pepper until well combined.
- Pour the dressing over the massaged kale and toss to coat evenly.
- Add the grated Parmesan cheese and toasted pine nuts (if using) to the salad. Toss gently to combine.
- Let the salad sit for about 10 minutes to allow the flavors to meld before serving.
Notes
- For added protein, consider topping the salad with grilled chicken or chickpeas.
- Substitute the pine nuts with sunflower seeds or walnuts for a different crunch.
