A delicious and healthy recipe for Lemon Butter Salmon served with crispy potatoes and broccoli, perfect for a weeknight dinner.

- 4 salmon fillets (6 ounces each)
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons unsalted butter
- 2 tablespoons fresh lemon juice
- Zest of 1 lemon
- 1 pound baby potatoes, halved
- 1 tablespoon fresh parsley, chopped (for garnish)
- 2 cups broccoli florets
Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, toss the halved baby potatoes with 1 tablespoon of olive oil, garlic powder, paprika, salt, and pepper. Spread them out in a single layer on a baking sheet.
- Roast the potatoes in the preheated oven for 20 minutes, or until they start to become golden and crispy.
- While the potatoes are roasting, season the salmon fillets with salt and pepper on both sides.
- In a small saucepan over medium heat, melt the butter. Once melted, stir in the lemon juice and lemon zest. Remove from heat and set aside.
- After the potatoes have roasted for 20 minutes, remove the baking sheet from the oven. Push the potatoes to one side and add the broccoli florets to the other side. Drizzle the broccoli with the remaining tablespoon of olive oil and season with salt and pepper.
- Place the salmon fillets on top of the potatoes and broccoli. Drizzle the lemon butter mixture over the salmon.
- Return the baking sheet to the oven and roast for an additional 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
- Remove from the oven and garnish with chopped parsley before serving.
Notes
- For added flavor, marinate the salmon in the lemon butter mixture for 30 minutes before cooking.
- Substitute asparagus or green beans for the broccoli for a different vegetable option.
