Ingredients

  • 2 pounds chicken thighs (bone-in, skin-on)
  • 2 tablespoons olive oil
  • 2 tablespoons jerk seasoning
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 lime (juiced)
  • 1 tablespoon honey
  • 1 ripe mango (diced)
  • 1/2 red onion (finely chopped)
  • 1 jalapeño (seeded and minced)
  • 1/4 cup cilantro (chopped)
  • 1 lime (juiced)
  • Salt and pepper to taste

Instructions

  1. Preheat your grill to medium-high heat. If using a charcoal grill, prepare the coals for direct grilling.
  2. In a large bowl, combine olive oil, jerk seasoning, salt, black pepper, lime juice, and honey. Mix well to create a marinade.
  3. Add the chicken thighs to the marinade, ensuring they are well coated. Let them marinate for at least 30 minutes, or up to 2 hours in the refrigerator for more flavor.
  4. While the chicken is marinating, prepare the mango salsa. In a medium bowl, combine diced mango, red onion, jalapeño, cilantro, lime juice, and season with salt and pepper. Mix gently and set aside.
  5. Once the grill is hot, place the marinated chicken thighs skin-side down on the grill. Cook for about 6-8 minutes, then flip and cook for another 6-8 minutes, or until the internal temperature reaches 165°F.
  6. Remove the chicken from the grill and let it rest for 5 minutes before serving.
  7. Serve the jerk chicken with a generous spoonful of mango salsa on top.

  • For a spicier kick, add more jalapeño or a dash of hot sauce to the mango salsa.
