- 2 pounds chicken thighs (bone-in, skin-on)
- 2 tablespoons olive oil
- 2 tablespoons jerk seasoning
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 lime (juiced)
- 1 tablespoon honey
- 1 ripe mango (diced)
- 1/2 red onion (finely chopped)
- 1 jalapeño (seeded and minced)
- 1/4 cup cilantro (chopped)
- 1 lime (juiced)
- Salt and pepper to taste
Instructions
- Preheat your grill to medium-high heat. If using a charcoal grill, prepare the coals for direct grilling.
- In a large bowl, combine olive oil, jerk seasoning, salt, black pepper, lime juice, and honey. Mix well to create a marinade.
- Add the chicken thighs to the marinade, ensuring they are well coated. Let them marinate for at least 30 minutes, or up to 2 hours in the refrigerator for more flavor.
- While the chicken is marinating, prepare the mango salsa. In a medium bowl, combine diced mango, red onion, jalapeño, cilantro, lime juice, and season with salt and pepper. Mix gently and set aside.
- Once the grill is hot, place the marinated chicken thighs skin-side down on the grill. Cook for about 6-8 minutes, then flip and cook for another 6-8 minutes, or until the internal temperature reaches 165°F.
- Remove the chicken from the grill and let it rest for 5 minutes before serving.
- Serve the jerk chicken with a generous spoonful of mango salsa on top.
Notes
- For a spicier kick, add more jalapeño or a dash of hot sauce to the mango salsa.
- Substitute chicken thighs with chicken breasts or drumsticks if preferred, adjusting cooking times as necessary.
