- 2 cups fresh broccoli florets
- 1 large Honeycrisp apple, cored and diced
- 1/2 cup shredded sharp cheddar cheese
- 1/4 cup red onion, finely chopped
- 1/2 cup walnuts, chopped
- 1/4 cup dried cranberries
- 1/2 cup plain Greek yogurt
- 2 tablespoons honey
- 1 tablespoon apple cider vinegar
- Salt and pepper to taste
Instructions
- In a large bowl, combine the broccoli florets, diced Honeycrisp apple, shredded cheddar cheese, red onion, walnuts, and dried cranberries. Toss gently to mix the ingredients evenly.
- In a separate small bowl, whisk together the Greek yogurt, honey, apple cider vinegar, salt, and pepper until smooth.
- Pour the dressing over the salad mixture and toss until all ingredients are well coated.
- Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld.
- Serve chilled or at room temperature.
Notes
- For added crunch, substitute sunflower seeds for walnuts.
- To make it vegan, replace Greek yogurt with a plant-based yogurt and use maple syrup instead of honey.
