- 2 pounds bone-in, skin-on chicken thighs
- 1/4 cup Dijon mustard
- 1/4 cup honey
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- In a mixing bowl, whisk together the Dijon mustard, honey, olive oil, minced garlic, dried thyme, paprika, salt, and pepper until well combined.
- Place the chicken thighs in a large baking dish and pour the honey Dijon mixture over them, ensuring each piece is well coated.
- Arrange the chicken skin-side up in the dish and pour any remaining sauce over the top.
- Bake in the preheated oven for 35-40 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the skin is golden brown.
- For extra crispiness, broil the chicken for an additional 2-3 minutes at the end of baking.
- Remove from the oven and let the chicken rest for 5 minutes before serving. Garnish with fresh parsley if desired.
Notes
- For a spicier kick, add a teaspoon of cayenne pepper to the marinade.
- You can substitute chicken breasts for thighs if you prefer leaner meat, but adjust the cooking time to avoid drying them out.
