Description

A simple and flavorful Hokkien noodle stir-fry recipe that combines fresh vegetables and savory sauces for a delicious meal.


Ingredients

  • 8 ounces fresh Hokkien noodles (or substitute with fresh egg noodles)
  • 2 tablespoons vegetable oil
  • 1 onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 cup sliced shiitake mushrooms
  • 1 cup bok choy, chopped
  • 1 cup bean sprouts
  • 1 carrot, julienned
  • 1/4 cup soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon dark soy sauce
  • 1 teaspoon sesame oil
  • 1/2 teaspoon white pepper
  • 2 green onions, chopped
  • 1 tablespoon sesame seeds (optional)

Instructions

  1. Cook the Hokkien noodles according to package instructions. Drain and set aside.
  2. In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the sliced onion and garlic, and stir-fry for about 2 minutes until fragrant.
  3. Add the shiitake mushrooms and cook for another 2-3 minutes until they are tender.
  4. Stir in the bok choy, bean sprouts, and carrot. Cook for an additional 3-4 minutes until the vegetables are just tender.
  5. Add the cooked noodles to the skillet. Pour in the soy sauce, oyster sauce, dark soy sauce, sesame oil, and white pepper. Toss everything together until the noodles are well coated and heated through.
  6. Remove from heat and garnish with chopped green onions and sesame seeds if desired.

Notes

  • For added protein, consider adding cooked shrimp, chicken, or tofu to the stir-fry.
  • For a spicier kick, add sliced chili peppers or a dash of chili oil during cooking.
