- 2 pounds boneless, skinless chicken breasts
- 1/4 cup olive oil
- 1/4 cup fresh lemon juice (about 2 lemons)
- 2 teaspoons dried oregano
- 2 teaspoons garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon red pepper flakes (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- In a large bowl, whisk together the olive oil, lemon juice, oregano, garlic powder, onion powder, salt, black pepper, and red pepper flakes (if using) until well combined.
- Add the chicken breasts to the marinade, ensuring they are fully coated. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or up to 4 hours for more flavor.
- Preheat your grill to medium-high heat (about 400°F). Lightly oil the grill grates to prevent sticking.
- Remove the chicken from the marinade and let any excess drip off. Discard the marinade.
- Place the chicken on the grill and cook for 6-7 minutes on one side without moving it. Flip the chicken and grill for an additional 6-7 minutes, or until the internal temperature reaches 165°F.
- Remove the chicken from the grill and let it rest for 5 minutes before slicing. Garnish with fresh parsley if desired.
Notes
- For a smoky flavor, add a teaspoon of smoked paprika to the marinade.
- Serve the grilled chicken over a bed of mixed greens or in a wrap with your favorite veggies for a fresh meal.
