- 2 medium eggplants, sliced into 1/2-inch rounds
- 1/4 cup olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 cup plain Greek yogurt
- 1 tablespoon lemon juice
- 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
- 1 clove garlic, minced
- 1/2 teaspoon paprika (optional)
Instructions
- Preheat your grill to medium-high heat.
- In a large bowl, combine the olive oil, salt, black pepper, and garlic powder. Add the eggplant slices and toss until they are well coated.
- Place the eggplant slices on the grill and cook for about 4-5 minutes on each side, or until they are tender and have nice grill marks. Remove from the grill and set aside.
- In a separate bowl, mix together the Greek yogurt, lemon juice, dill, minced garlic, and paprika (if using). Stir until well combined.
- Serve the grilled eggplant warm, topped with the yogurt sauce.
Notes
- For added flavor, marinate the eggplant slices in the olive oil mixture for 30 minutes before grilling.
- Try adding other herbs like mint or parsley to the yogurt sauce for a different flavor profile.
