Ingredients

  • 2 medium eggplants, sliced into 1/2-inch rounds
  • 1/4 cup olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 cup plain Greek yogurt
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
  • 1 clove garlic, minced
  • 1/2 teaspoon paprika (optional)

Instructions

  1. Preheat your grill to medium-high heat.
  2. In a large bowl, combine the olive oil, salt, black pepper, and garlic powder. Add the eggplant slices and toss until they are well coated.
  3. Place the eggplant slices on the grill and cook for about 4-5 minutes on each side, or until they are tender and have nice grill marks. Remove from the grill and set aside.
  4. In a separate bowl, mix together the Greek yogurt, lemon juice, dill, minced garlic, and paprika (if using). Stir until well combined.
  5. Serve the grilled eggplant warm, topped with the yogurt sauce.
