Ingredients

  • 2 boneless, skinless chicken breasts (about 1 pound)
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 4 cups broccoli florets (fresh or frozen)
  • 1 cup cooked quinoa or rice
  • 1/2 cup plain Greek yogurt
  • 2 tablespoons mayonnaise
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1 teaspoon dried dill (optional)

Instructions

  1. Preheat your grill or grill pan over medium-high heat.
  2. In a small bowl, mix olive oil, garlic powder, paprika, salt, and pepper. Rub the mixture over the chicken breasts.
  3. Grill the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F. Remove from the grill and let it rest for 5 minutes before slicing.
  4. While the chicken is grilling, steam the broccoli florets until tender, about 4-5 minutes. If using frozen broccoli, follow the package instructions.
  5. In a separate bowl, combine Greek yogurt, mayonnaise, minced garlic, lemon juice, and dill (if using). Mix until smooth and creamy.
  6. To assemble the bowls, divide the cooked quinoa or rice among four bowls. Top with sliced grilled chicken and steamed broccoli. Drizzle with the creamy garlic sauce.
  7. Serve immediately and enjoy!

  • For a spicier kick, add a pinch of cayenne pepper to the chicken rub.
