Description

Ingredients

  • 1 pound ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large egg
  • 1 tablespoon olive oil (for cooking)
  • 8 ounces orzo pasta
  • 2 cups chicken broth
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup feta cheese, crumbled
  • Juice of 1 lemon

Instructions

  1. In a large bowl, combine ground chicken, breadcrumbs, Parmesan cheese, parsley, onion, garlic, oregano, salt, pepper, and egg. Mix until well combined.
  2. Form the mixture into meatballs, about 1 inch in diameter.
  3. Heat olive oil in a large skillet over medium heat. Add the meatballs and cook for about 6-8 minutes, turning occasionally, until browned and cooked through. Remove from skillet and set aside.
  4. In the same skillet, add orzo and toast for 1-2 minutes until slightly golden.
  5. Pour in chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for about 10-12 minutes, or until orzo is tender and liquid is absorbed.
  6. Stir in cherry tomatoes, cucumber, and cooked meatballs. Cook for an additional 2-3 minutes until heated through.
  7. Remove from heat and drizzle with lemon juice. Top with crumbled feta cheese before serving.

Notes

  • For added flavor, mix in some chopped olives or bell peppers with the orzo.
  • Substitute ground turkey for ground chicken for a leaner option.
