Garlic Parmesan Chicken and Potatoes is a flavorful dish featuring tender chicken thighs and baby potatoes coated in a savory garlic and Parmesan mixture, baked to perfection.


Ingredients

  • 2 pounds bone-in, skin-on chicken thighs
  • 1 pound baby potatoes, halved
  • 4 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried Italian seasoning
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the olive oil, minced garlic, Italian seasoning, salt, and black pepper. Mix well.
  3. Add the chicken thighs to the bowl and toss to coat them evenly with the garlic mixture.
  4. Place the coated chicken thighs in a large baking dish or on a sheet pan.
  5. In the same bowl, add the halved baby potatoes and toss them in the remaining garlic mixture until well coated.
  6. Arrange the potatoes around the chicken in the baking dish.
  7. Sprinkle the grated Parmesan cheese evenly over the chicken and potatoes.
  8. Bake in the preheated oven for 40-45 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (75°C).
  9. If desired, broil for an additional 2-3 minutes to achieve a golden crust on the cheese.
  10. Remove from the oven and let it rest for 5 minutes. Garnish with fresh parsley before serving.
