- 2 pounds bone-in, skin-on chicken thighs
- 1 pound baby potatoes, halved
- 4 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon dried Italian seasoning
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ cup grated Parmesan cheese
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the olive oil, minced garlic, Italian seasoning, salt, and black pepper. Mix well.
- Add the chicken thighs to the bowl and toss to coat them evenly with the garlic mixture.
- Place the coated chicken thighs in a large baking dish or on a sheet pan.
- In the same bowl, add the halved baby potatoes and toss them in the remaining garlic mixture until well coated.
- Arrange the potatoes around the chicken in the baking dish.
- Sprinkle the grated Parmesan cheese evenly over the chicken and potatoes.
- Bake in the preheated oven for 40-45 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (75°C).
- If desired, broil for an additional 2-3 minutes to achieve a golden crust on the cheese.
- Remove from the oven and let it rest for 5 minutes. Garnish with fresh parsley before serving.

- For a spicier kick, add 1 teaspoon of red pepper flakes to the garlic mixture.
