- 3 cups cooked chicken, shredded
- 1/2 cup mayonnaise
- 1/4 cup plain Greek yogurt
- 2 tablespoons curry powder
- 1 tablespoon honey
- 1 tablespoon lemon juice
- 1/2 cup celery, diced
- 1/2 cup grapes, halved
- 1/4 cup almonds, sliced
- Salt and pepper to taste
- Lettuce leaves for serving (optional)
Instructions
- In a large mixing bowl, combine the shredded chicken, mayonnaise, Greek yogurt, curry powder, honey, and lemon juice. Mix well until all ingredients are fully incorporated.
- Add the diced celery, halved grapes, and sliced almonds to the bowl. Stir gently to combine, being careful not to break up the grapes.
- Season the mixture with salt and pepper to taste. Adjust the seasoning as needed.
- Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.
- Serve the curry chicken salad on a bed of lettuce leaves or in a sandwich.
Notes
- For a lighter version, substitute half of the mayonnaise with additional Greek yogurt.
