Curry Chicken Salad is a flavorful twist on the traditional chicken salad, combining shredded chicken with a creamy curry dressing and fresh ingredients.


Ingredients

  • 3 cups cooked chicken, shredded
  • 1/2 cup mayonnaise
  • 1/4 cup plain Greek yogurt
  • 2 tablespoons curry powder
  • 1 tablespoon honey
  • 1 tablespoon lemon juice
  • 1/2 cup celery, diced
  • 1/2 cup grapes, halved
  • 1/4 cup almonds, sliced
  • Salt and pepper to taste
  • Lettuce leaves for serving (optional)

Instructions

  1. In a large mixing bowl, combine the shredded chicken, mayonnaise, Greek yogurt, curry powder, honey, and lemon juice. Mix well until all ingredients are fully incorporated.
  2. Add the diced celery, halved grapes, and sliced almonds to the bowl. Stir gently to combine, being careful not to break up the grapes.
  3. Season the mixture with salt and pepper to taste. Adjust the seasoning as needed.
  4. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.
  5. Serve the curry chicken salad on a bed of lettuce leaves or in a sandwich.

Notes
