A simple and tasty crockpot recipe for pepper steak, perfect for a hearty dinner.


Ingredients

  • 1 pound flank steak, sliced into thin strips
  • 1 tablespoon vegetable oil
  • 1 medium onion, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 3 cloves garlic, minced
  • 1 cup beef broth
  • 1/4 cup soy sauce
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • 1 teaspoon ground black pepper
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • Cooked rice, for serving

Instructions

  1. In a large skillet, heat the vegetable oil over medium-high heat. Add the sliced flank steak and sear until browned on all sides, about 3-4 minutes. Remove from heat and transfer to the crockpot.
  2. In the same skillet, add the sliced onion and bell peppers. Sauté for 2-3 minutes until slightly softened. Add the minced garlic and cook for an additional minute.
  3. Pour the sautéed vegetables over the steak in the crockpot. In a separate bowl, whisk together the beef broth, soy sauce, cornstarch, water, black pepper, sugar, and salt. Pour this mixture over the steak and vegetables in the crockpot.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the steak is tender.
  5. Before serving, stir the mixture to combine. Serve over cooked rice.

Notes

  • For a spicier kick, add sliced jalapeños or a dash of red pepper flakes to the crockpot.
  • Substitute the flank steak with sirloin or round steak for a different flavor and texture.
