Instructions
- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.
- Wash and scrub the baby potatoes thoroughly. Cut each potato in half lengthwise.
- In a large bowl, combine the olive oil, garlic powder, onion powder, smoked paprika, salt, and black pepper. Mix well.
- Add the halved potatoes to the bowl and toss until they are evenly coated with the oil and spice mixture.
- Arrange the potatoes cut side down on the prepared baking sheet in a single layer.
- Bake in the preheated oven for 25-30 minutes, or until the potatoes are golden brown and crispy.
- Remove from the oven and let them cool for a few minutes. Garnish with chopped fresh parsley before serving.
