- 3 to 4 pounds pork knuckle (also known as pork hock)
- 2 tablespoons kosher salt
- 1 tablespoon black pepper
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 teaspoon smoked paprika
- 1 teaspoon caraway seeds (optional)
- 4 cups water
- 1 onion, quartered
- 2 cloves garlic, smashed
- 1 tablespoon vegetable oil
Instructions
- Preheat your oven to 350°F.
- Rinse the pork knuckle under cold water and pat it dry with paper towels. Score the skin in a crisscross pattern, being careful not to cut into the meat.
- In a small bowl, mix together the kosher salt, black pepper, garlic powder, onion powder, smoked paprika, and caraway seeds. Rub this spice mixture all over the pork knuckle, making sure to get it into the scored skin.
- In a large roasting pan, combine the water, quartered onion, and smashed garlic. Place the pork knuckle on a rack in the roasting pan, skin side up.
- Roast the pork knuckle in the preheated oven for about 2 hours, basting it with the pan juices every 30 minutes.
- After 2 hours, increase the oven temperature to 425°F. Brush the skin with vegetable oil and roast for an additional 30 to 45 minutes, or until the skin is crispy and golden brown.
- Once done, remove the pork knuckle from the oven and let it rest for 15 minutes before carving.
Notes
- For extra crispiness, place the pork knuckle under the broiler for a few minutes after roasting, keeping a close eye to prevent burning.
- Try adding your favorite herbs like rosemary or thyme to the spice rub for added flavor.
- Serve with sauerkraut or potato dumplings for a traditional side.
