Description

A delicious and creamy one-pot chicken pasta dish featuring whipped ricotta, perfect for a quick weeknight dinner.


Ingredients

  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 cloves garlic, minced
  • 1 teaspoon dried Italian herbs
  • 8 ounces uncooked pasta (penne or fusilli work well)
  • 4 cups chicken broth
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh spinach
  • 1 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • Fresh basil leaves, for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chicken pieces, salt, and black pepper. Cook until the chicken is browned and cooked through, about 5-7 minutes. Remove the chicken from the pot and set aside.
  2. In the same pot, add the minced garlic and dried Italian herbs. Sauté for about 1 minute until fragrant.
  3. Add the uncooked pasta and chicken broth to the pot. Stir to combine, then bring to a boil. Reduce heat to a simmer, cover, and cook for about 10-12 minutes, or until the pasta is al dente and most of the liquid is absorbed.
  4. Stir in the cherry tomatoes and fresh spinach. Cook for an additional 2-3 minutes until the spinach wilts.
  5. In a small bowl, mix the ricotta cheese and grated Parmesan cheese until smooth. Stir the whipped ricotta into the pasta mixture until well combined.
  6. Return the cooked chicken to the pot and mix everything together. Cook for another 2 minutes to heat through.
  7. Serve hot, garnished with fresh basil leaves.
