- 2 tablespoons olive oil
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 1 cup orzo pasta
- 2 cups chicken broth
- 1 cup heavy cream
- 1 cup cherry tomatoes, halved
- 2 cups fresh spinach
- 1/2 cup grated Parmesan cheese
- Fresh basil, for garnish
Instructions
- In a large skillet, heat the olive oil over medium-high heat. Add the chicken pieces, season with salt, pepper, garlic powder, and Italian seasoning. Cook for about 5-7 minutes, or until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, add the orzo and chicken broth. Bring to a boil, then reduce the heat to a simmer. Cover and cook for about 10 minutes, or until the orzo is tender and most of the liquid is absorbed.
- Stir in the heavy cream, cherry tomatoes, and spinach. Cook for an additional 3-5 minutes, or until the spinach is wilted.
- Return the cooked chicken to the skillet and stir in the Parmesan cheese until melted and combined.
- Serve hot, garnished with fresh basil.
Notes
- For a lighter version, substitute half-and-half for the heavy cream.
- Add other vegetables like zucchini or bell peppers for extra flavor and nutrition.
