Creamy Tuscan Chicken Orzo is a delicious and comforting dish featuring tender chicken, orzo pasta, and fresh vegetables in a rich and creamy sauce.


Ingredients

  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup cherry tomatoes, halved
  • 2 cups fresh spinach
  • 1/2 cup grated Parmesan cheese
  • Fresh basil, for garnish

Instructions

  1. In a large skillet, heat the olive oil over medium-high heat. Add the chicken pieces, season with salt, pepper, garlic powder, and Italian seasoning. Cook for about 5-7 minutes, or until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.
  2. In the same skillet, add the orzo and chicken broth. Bring to a boil, then reduce the heat to a simmer. Cover and cook for about 10 minutes, or until the orzo is tender and most of the liquid is absorbed.
  3. Stir in the heavy cream, cherry tomatoes, and spinach. Cook for an additional 3-5 minutes, or until the spinach is wilted.
  4. Return the cooked chicken to the skillet and stir in the Parmesan cheese until melted and combined.
  5. Serve hot, garnished with fresh basil.

Notes

  • For a lighter version, substitute half-and-half for the heavy cream.
