Description

Delicious and creamy turkey meatballs packed with spinach, perfect for a comforting meal.


Ingredients

  • 1 pound ground turkey
  • 1 cup fresh spinach, chopped
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup milk
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 teaspoon red pepper flakes (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large bowl, combine the ground turkey, chopped spinach, breadcrumbs, Parmesan cheese, milk, egg, minced garlic, onion powder, Italian seasoning, salt, and pepper. Mix until well combined.
  2. Form the mixture into meatballs, about 1 to 1.5 inches in diameter. You should get about 20 meatballs.
  3. Heat olive oil in a large skillet over medium heat. Add the meatballs and cook for 5-7 minutes, turning occasionally, until browned on all sides. Remove the meatballs from the skillet and set aside.
  4. In the same skillet, add the heavy cream and chicken broth. Stir well and bring to a simmer. If using, add red pepper flakes for a bit of heat.
  5. Return the meatballs to the skillet, cover, and let simmer for about 10 minutes, or until the meatballs are cooked through and the sauce has thickened slightly.
  6. Serve the meatballs hot, garnished with fresh parsley. Enjoy over pasta, rice, or on their own!

Notes

  • For a lighter version, substitute ground turkey with ground chicken or lean beef.
  • Add some chopped sun-dried tomatoes or olives to the meatball mixture for an extra flavor boost.
