  • 1 cup cooked rotisserie chicken, shredded
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup spinach, chopped
  • ½ cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the penne pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
  3. Stir in the minced garlic and cook for an additional 1 minute until fragrant.
  4. Add the shredded rotisserie chicken to the skillet and stir to combine.
  5. Pour in the heavy cream and chicken broth, then add the Italian seasoning, salt, and pepper. Stir well and bring to a simmer.
  6. Reduce the heat to low and add the chopped spinach, cooking until wilted, about 2-3 minutes.
  7. Stir in the cooked penne pasta and grated Parmesan cheese until well combined and heated through.
  8. Serve immediately, garnished with fresh parsley.
