Description
A delightful recipe for creamy garlic shrimp served with cheesy potato packets, perfect for a comforting meal.
Ingredients
Scale
- 2 pounds medium shrimp, peeled and deveined
- 4 medium russet potatoes, thinly sliced
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- 2 tablespoons fresh parsley, chopped (for garnish)
- Aluminum foil (for wrapping)
Instructions
- Preheat your oven to 400°F.
- In a large bowl, combine the heavy cream, minced garlic, olive oil, paprika, salt, black pepper, and red pepper flakes. Mix well.
- Add the shrimp to the bowl and toss to coat them in the creamy mixture.
- Lay out 4 large pieces of aluminum foil. Divide the sliced potatoes evenly among the foil pieces, placing them in the center of each.
- Spoon the shrimp and creamy mixture over the potatoes, dividing it equally.
- Sprinkle the shredded cheddar cheese on top of each packet.
- Fold the aluminum foil over the ingredients to create sealed packets, ensuring they are tightly closed.
- Place the packets on a baking sheet and bake in the preheated oven for 25-30 minutes, or until the shrimp are cooked through and the potatoes are tender.
- Carefully open the packets (watch out for steam) and garnish with chopped parsley before serving.
Notes
- For a spicier kick, add diced jalapeños or use spicy cheese.
- You can substitute shrimp with chicken or a mix of vegetables for a different flavor profile.
