- 8 ounces fettuccine or spaghetti
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 teaspoon salt
- ½ teaspoon black pepper
- ¼ teaspoon red pepper flakes (optional)
- 2 tablespoons chopped fresh parsley (for garnish)
Instructions
- Cook the pasta according to package instructions until al dente. Drain and set aside, reserving ½ cup of pasta water.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant but not browned.
- Pour in the heavy cream and bring to a gentle simmer. Stir in the grated Parmesan cheese, salt, black pepper, and red pepper flakes (if using). Mix until the cheese is melted and the sauce is smooth.
- Add the cooked pasta to the skillet and toss to coat in the sauce. If the sauce is too thick, add a little reserved pasta water until you reach the desired consistency.
- Serve immediately, garnished with chopped parsley.
Notes
- For added protein, consider adding grilled chicken or sautéed shrimp to the pasta.
- Substitute half of the heavy cream with low-fat milk or a plant-based cream for a lighter version.
