- 2 cups uncooked penne pasta
- 1 pound boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 4 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 cup spinach, chopped
- 1/4 cup fresh parsley, chopped (for garnish)
Instructions
- In a large skillet, heat olive oil over medium heat. Add the chicken breasts and season with Italian seasoning, salt, and pepper. Cook for about 5-7 minutes on each side until browned and cooked through. Remove from skillet and set aside to cool slightly.
- In the same skillet, add minced garlic and sauté for about 1 minute until fragrant.
- Pour in the chicken broth and bring to a simmer. Stir in the heavy cream and Parmesan cheese until well combined.
- Cut the cooked chicken into bite-sized pieces and return it to the skillet. Add the uncooked penne pasta and chopped spinach. Stir to combine.
- Cover the skillet and let it simmer on low heat for about 15-20 minutes, or until the pasta is cooked al dente, stirring occasionally.
- Once the pasta is cooked, remove from heat and let it sit for a few minutes to thicken. Garnish with fresh parsley before serving.
Notes
- For a lighter version, substitute half-and-half for heavy cream.
- You can also add sun-dried tomatoes or mushrooms for extra flavor and texture.
- If you prefer a bit of heat, sprinkle in some red pepper flakes while cooking.
