Ingredients

  • 2 cups uncooked penne pasta
  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 cup spinach, chopped
  • 1/4 cup fresh parsley, chopped (for garnish)

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add the chicken breasts and season with Italian seasoning, salt, and pepper. Cook for about 5-7 minutes on each side until browned and cooked through. Remove from skillet and set aside to cool slightly.
  2. In the same skillet, add minced garlic and sauté for about 1 minute until fragrant.
  3. Pour in the chicken broth and bring to a simmer. Stir in the heavy cream and Parmesan cheese until well combined.
  4. Cut the cooked chicken into bite-sized pieces and return it to the skillet. Add the uncooked penne pasta and chopped spinach. Stir to combine.
  5. Cover the skillet and let it simmer on low heat for about 15-20 minutes, or until the pasta is cooked al dente, stirring occasionally.
  6. Once the pasta is cooked, remove from heat and let it sit for a few minutes to thicken. Garnish with fresh parsley before serving.

Notes

  • For a lighter version, substitute half-and-half for heavy cream.
  • You can also add sun-dried tomatoes or mushrooms for extra flavor and texture.
