Ingredients

  • 8 ounces fettuccine pasta
  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/2 cup fresh spinach, chopped
  • 1/4 cup fresh parsley, chopped (for garnish)

Instructions

  1. Cook the fettuccine according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium-high heat. Add the chicken pieces, season with salt and pepper, and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant.
  4. Pour in the heavy cream and chicken broth, stirring to combine. Bring the mixture to a simmer.
  5. Add the grated Parmesan cheese and Italian seasoning, stirring until the cheese is melted and the sauce is creamy.
  6. Return the cooked chicken to the skillet and add the chopped spinach. Cook for an additional 2-3 minutes until the spinach is wilted.
  7. Toss the cooked fettuccine in the sauce until well coated.
  8. Serve immediately, garnished with fresh parsley.
