- 2 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 2 cups fresh spinach
- 1 package (5.2 oz) Boursin cheese
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
- 1/4 cup fresh basil, chopped
Instructions
- Cook the orzo according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
- Add cherry tomatoes to the skillet and cook until they start to soften.
- Stir in the fresh spinach and cook until wilted.
- Add the cooked orzo to the skillet and mix well with the vegetables.
- Stir in the Boursin cheese until melted and creamy.
- Mix in the grated Parmesan cheese and season with salt and pepper to taste.
- Garnish with fresh basil before serving.
