Description

Cowboy Casserole is a hearty and delicious dish that combines ground beef, vegetables, and tater tots, making it a family favorite.


Ingredients

  • 2 pounds ground beef
  • 1 medium onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) corn, drained
  • 1 can (10.5 ounces) diced tomatoes with green chilies
  • 1 can (10.5 ounces) cream of mushroom soup
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 2 cups shredded cheddar cheese
  • 1 package (2.5 pounds) frozen tater tots

Instructions

  1. In a large skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  2. Add the chopped onion, bell pepper, and minced garlic to the skillet. Sauté until the vegetables are softened, about 5 minutes.
  3. Stir in the black beans, corn, diced tomatoes, cream of mushroom soup, chili powder, cumin, salt, and pepper. Mix well and let simmer for 5 minutes.
  4. In a slow cooker, layer half of the beef mixture on the bottom. Sprinkle 1 cup of shredded cheddar cheese over the beef mixture.
  5. Add a layer of frozen tater tots on top of the cheese. Repeat the layers with the remaining beef mixture, another cup of cheese, and finish with the remaining tater tots.
  6. Cover and cook on low for 4-6 hours or on high for 2-3 hours, until the tater tots are golden and crispy.
  7. In the last 15 minutes of cooking, sprinkle the remaining cheddar cheese on top and cover until melted.

Notes

  • For a spicier kick, add diced jalapeños or a dash of hot sauce to the beef mixture.
  • Substitute ground turkey or chicken for a leaner option, or use a plant-based meat alternative for a vegetarian version.
