  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 can (13.5 ounces) coconut milk
  • 1/4 cup fresh lime juice (about 2 limes)
  • 1 tablespoon lime zest
  • 1 tablespoon honey
  • 1/4 cup chopped fresh cilantro
  • Lime wedges for serving

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the olive oil, salt, black pepper, garlic powder, and onion powder. Add the chicken thighs and toss to coat evenly.
  3. Place the chicken thighs in a single layer in a large baking dish.
  4. In a separate bowl, whisk together the coconut milk, lime juice, lime zest, and honey until well combined.
  5. Pour the coconut lime mixture over the chicken thighs in the baking dish.
  6. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  7. Remove from the oven and let the chicken rest for 5 minutes. Sprinkle with chopped cilantro before serving.
  8. Serve with lime wedges on the side for an extra burst of flavor.
