- 1 teaspoon onion powder
- 1 can (13.5 ounces) coconut milk
- 1/4 cup fresh lime juice (about 2 limes)
- 1 tablespoon lime zest
- 1 tablespoon honey
- 1/4 cup chopped fresh cilantro
- Lime wedges for serving
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the olive oil, salt, black pepper, garlic powder, and onion powder. Add the chicken thighs and toss to coat evenly.
- Place the chicken thighs in a single layer in a large baking dish.
- In a separate bowl, whisk together the coconut milk, lime juice, lime zest, and honey until well combined.
- Pour the coconut lime mixture over the chicken thighs in the baking dish.
- Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
- Remove from the oven and let the chicken rest for 5 minutes. Sprinkle with chopped cilantro before serving.
- Serve with lime wedges on the side for an extra burst of flavor.

- For a spicier kick, add 1 teaspoon of red pepper flakes to the coconut milk mixture.
