Ingredients

  • 8 ounces rotini pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup corn kernels (fresh or frozen)
  • 1 cup black beans, rinsed and drained
  • 1/2 cup red onion, finely chopped
  • 1/2 cup fresh cilantro, chopped
  • 1 avocado, diced
  • 1/4 cup olive oil
  • 1/4 cup lime juice (about 2 limes)
  • 1 teaspoon honey or agave syrup
  • 1 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Cook the rotini pasta according to package instructions. Drain and rinse under cold water to cool.
  2. In a large bowl, combine the cooked pasta, cherry tomatoes, corn, black beans, red onion, cilantro, and avocado.
  3. In a separate bowl, whisk together the olive oil, lime juice, honey, garlic powder, cumin, salt, and pepper until well combined.
  4. Pour the dressing over the pasta salad and toss gently to combine all ingredients evenly.
  5. Chill the salad in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
