- 8 ounces rotini pasta
- 1 cup cherry tomatoes, halved
- 1 cup corn kernels (fresh or frozen)
- 1 cup black beans, rinsed and drained
- 1/2 cup red onion, finely chopped
- 1/2 cup fresh cilantro, chopped
- 1 avocado, diced
- 1/4 cup olive oil
- 1/4 cup lime juice (about 2 limes)
- 1 teaspoon honey or agave syrup
- 1 teaspoon garlic powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
Instructions
- Cook the rotini pasta according to package instructions. Drain and rinse under cold water to cool.
- In a large bowl, combine the cooked pasta, cherry tomatoes, corn, black beans, red onion, cilantro, and avocado.
- In a separate bowl, whisk together the olive oil, lime juice, honey, garlic powder, cumin, salt, and pepper until well combined.
- Pour the dressing over the pasta salad and toss gently to combine all ingredients evenly.
- Chill the salad in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
