- 2 pounds baby potatoes, halved
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried Italian herbs (or oregano)
- 1 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the halved baby potatoes, olive oil, minced garlic, salt, black pepper, and Italian herbs. Toss until the potatoes are well coated.
- Spread the potatoes in a single layer on a baking sheet lined with parchment paper.
- Roast in the preheated oven for 25-30 minutes, or until the potatoes are golden brown and tender, stirring halfway through for even cooking.
- Remove the baking sheet from the oven and sprinkle the cheddar and Parmesan cheeses evenly over the potatoes.
- Return the baking sheet to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and garnish with chopped fresh parsley before serving.
