Ingredients

Scale
  • 2 cups cooked chicken, shredded
  • 1 cup marinara sauce
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 cup spinach, chopped (optional)
  • 1/2 cup almond flour (for topping)
  • 2 tablespoons olive oil (for topping)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the shredded chicken, marinara sauce, ricotta cheese, garlic powder, Italian seasoning, salt, black pepper, and red pepper flakes. If using spinach, fold it into the mixture.
  3. Spread the chicken mixture evenly in a greased 9×13-inch baking dish.
  4. In a separate bowl, mix the almond flour with olive oil until it resembles coarse crumbs. Sprinkle this mixture evenly over the chicken casserole.
  5. Top with shredded mozzarella cheese and grated Parmesan cheese.
  6. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden brown.
  7. Let it cool for about 5 minutes before serving.

Notes

  • For added flavor, consider adding chopped bell peppers or mushrooms to the chicken mixture.
  • To make it spicier, increase the amount of red pepper flakes or add sliced jalapeños.
