  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro, for garnish (optional)

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook until softened, about 3-4 minutes. Stir in the minced garlic and cook for an additional 1 minute until fragrant.
  2. Add the ground beef to the skillet, breaking it apart with a spoon. Cook until browned and cooked through, about 5-7 minutes. Drain excess fat if necessary.
  3. Stir in the enchilada sauce, beef broth, chili powder, cumin, salt, and pepper. Bring the mixture to a simmer.
  4. Add the cheese tortellini to the skillet and cook according to package instructions, usually about 3-5 minutes, until the tortellini is tender.
  5. Once the tortellini is cooked, remove the skillet from heat and stir in the shredded cheddar and Monterey Jack cheeses until melted and well combined.
  6. Serve immediately, garnished with fresh cilantro if desired.
