- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can (15 ounces) enchilada sauce
- 1 cup beef broth
- 1 package (9 ounces) cheese tortellini
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Fresh cilantro, for garnish (optional)
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook until softened, about 3-4 minutes. Stir in the minced garlic and cook for an additional 1 minute until fragrant.
- Add the ground beef to the skillet, breaking it apart with a spoon. Cook until browned and cooked through, about 5-7 minutes. Drain excess fat if necessary.
- Stir in the enchilada sauce, beef broth, chili powder, cumin, salt, and pepper. Bring the mixture to a simmer.
- Add the cheese tortellini to the skillet and cook according to package instructions, usually about 3-5 minutes, until the tortellini is tender.
- Once the tortellini is cooked, remove the skillet from heat and stir in the shredded cheddar and Monterey Jack cheeses until melted and well combined.
- Serve immediately, garnished with fresh cilantro if desired.

- For a spicier kick, add diced jalapeños or a dash of hot sauce to the beef mixture.
- Substitute ground turkey or chicken for a leaner option, or use a plant-based meat alternative for a vegetarian version.
