Ingredients

- 2 cups diced apples (about 2 medium apples)
- 1/2 cup raisins
- 1/2 cup chopped walnuts (or pecans)
- 1/4 cup plain Greek yogurt
- 2 tablespoons honey
- 1 tablespoon lemon juice
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
Instructions
- In a large mixing bowl, combine the shredded carrots, diced apples, raisins, and chopped walnuts.
- In a separate small bowl, whisk together the Greek yogurt, honey, lemon juice, cinnamon, and salt until smooth.
- Pour the yogurt dressing over the carrot and apple mixture.
- Toss everything together until the salad is well coated with the dressing.
- Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
- Serve chilled and enjoy!

- For added crunch, consider adding a handful of sunflower seeds or pumpkin seeds.
