Description

Brown Sugar Banana Pancakes are a delicious breakfast treat that combines the sweetness of brown sugar and ripe bananas for a delightful start to your day.

Ingredients

Scale
  • 1 cup all-purpose flour
  • 2 tablespoons brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons unsalted butter, melted
  • 1 ripe banana, mashed
  • 1 teaspoon vanilla extract
  • Butter or oil for cooking

Instructions

  1. In a large bowl, whisk together the flour, brown sugar, baking powder, baking soda, and salt.
  2. In another bowl, combine the buttermilk, egg, melted butter, mashed banana, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined; do not overmix.
  4. Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
  5. Pour about 1/4 cup of batter for each pancake onto the skillet.
  6. Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook for another 1-2 minutes until golden brown.
  7. Repeat with remaining batter.
  8. Serve warm with maple syrup or your favorite toppings.

Notes

  • For added flavor, mix in a handful of chocolate chips or chopped nuts into the batter before cooking.
  • If you prefer a healthier option, substitute half of the all-purpose flour with whole wheat flour and reduce the brown sugar to 1 tablespoon.
