Description

A delicious and hearty BLT Grilled Cheese Sandwich that combines crispy bacon, fresh tomatoes, and melted cheese between slices of toasted bread.


Ingredients

  • 8 slices of bread (white or whole wheat)
  • 8 slices of bacon
  • 1 large tomato, sliced
  • 4 ounces of cheddar cheese, shredded
  • 4 ounces of mozzarella cheese, shredded
  • 4 tablespoons of mayonnaise
  • 1 tablespoon of butter
  • Salt and pepper to taste
  • Fresh lettuce leaves

Instructions

  1. In a skillet over medium heat, cook the bacon until crispy. Remove and drain on paper towels. Reserve a tablespoon of bacon grease in the skillet.
  2. Spread 1 tablespoon of mayonnaise on one side of each slice of bread.
  3. Heat the skillet with the reserved bacon grease over medium heat. Place 4 slices of bread, mayonnaise side down, in the skillet.
  4. Layer each slice of bread with 1 ounce of cheddar cheese, 1 ounce of mozzarella cheese, 2 slices of bacon, a few tomato slices, and a couple of lettuce leaves. Season with salt and pepper.
  5. Top with the remaining slices of bread, mayonnaise side up. Cook until the bottom is golden brown, about 3-4 minutes.
  6. Carefully flip the sandwiches and cook the other side until golden brown and the cheese is melted, about 3-4 minutes more.
  7. Remove from the skillet, slice in half, and serve immediately.

Notes

  • For a spicy kick, add sliced jalapeños or a dash of hot sauce to the sandwich before grilling.
  • Try different cheeses like pepper jack or gouda for a unique flavor twist.
