Description

A delicious BBQ Chicken Quesadilla recipe that combines shredded chicken, BBQ sauce, and a blend of cheeses, all grilled to perfection.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup BBQ sauce
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 4 large flour tortillas
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • Sour cream and chopped green onions for serving (optional)

Instructions

  1. In a large bowl, combine the shredded chicken and BBQ sauce, mixing well until the chicken is fully coated.
  2. In another bowl, mix the cheddar cheese, mozzarella cheese, garlic powder, onion powder, black pepper, and salt.
  3. Heat a large skillet over medium heat and add 1/2 tablespoon of olive oil.
  4. Place one tortilla in the skillet and sprinkle half of the cheese mixture evenly over the tortilla.
  5. Spread half of the BBQ chicken mixture over the cheese, then top with the remaining cheese mixture.
  6. Place a second tortilla on top and cook for about 3-4 minutes, or until the bottom tortilla is golden brown.
  7. Carefully flip the quesadilla using a large spatula and add the remaining olive oil to the skillet. Cook for another 3-4 minutes until the second side is golden brown and the cheese is melted.
  8. Remove from the skillet and let it cool for a minute before slicing into wedges.
  9. Serve with sour cream and chopped green onions, if desired.

Notes

  • For a spicier kick, add sliced jalapeños to the chicken mixture before assembling the quesadilla.
  • You can substitute the chicken with cooked pulled pork or beef for a different flavor profile.
