- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 cup all-purpose flour
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 large eggs
- 1 cup panko breadcrumbs
- 1 cup mayonnaise
- 2 tablespoons sweet chili sauce
- 1 tablespoon sriracha (adjust for spice preference)
- 1 tablespoon honey
- 2 teaspoons rice vinegar
- Chopped green onions for garnish
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Dredge each piece of chicken in the flour mixture, shaking off the excess.
- Dip the floured chicken into the beaten eggs, allowing any excess to drip off.
- Coat the chicken in panko breadcrumbs, pressing gently to adhere.
- Place the breaded chicken pieces on the prepared baking sheet. Bake for 20-25 minutes, or until golden brown and cooked through.
- While the chicken is baking, prepare the sauce by mixing mayonnaise, sweet chili sauce, sriracha, honey, and rice vinegar in a bowl until smooth.
- Once the chicken is done, toss it in the sauce until evenly coated.
- Serve immediately, garnished with chopped green onions.
Notes
- For a healthier version, you can air fry the chicken at 375°F for 15-20 minutes instead of baking.
- Substitute the chicken with shrimp or tofu for a different protein option.
