A delicious and easy recipe for Baked Garlic Dijon Salmon, perfect for a weeknight dinner.

- 2 pounds fresh salmon fillets
- 4 tablespoons Dijon mustard
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon honey
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon fresh lemon juice
- 1 tablespoon chopped fresh parsley (for garnish)
- Lemon wedges (for serving)
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a small bowl, whisk together the Dijon mustard, minced garlic, olive oil, honey, salt, black pepper, and lemon juice until well combined.
- Place the salmon fillets skin-side down on the prepared baking sheet. Brush the Dijon mixture generously over the top of each fillet.
- Bake in the preheated oven for 12-15 minutes, or until the salmon flakes easily with a fork and reaches an internal temperature of 145°F (63°C).
- Remove from the oven and let it rest for a few minutes. Garnish with chopped parsley and serve with lemon wedges.
Notes
- For an extra layer of flavor, add a teaspoon of smoked paprika to the Dijon mixture.
- Serve the salmon over a bed of sautéed spinach or alongside roasted vegetables for a complete meal.
