Ingredients

Scale
  • 1 pound ground beef (80/20 blend)
  • 4 slices bacon
  • 4 ounces goat cheese, softened
  • 1/2 cup mayonnaise
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • 4 hamburger buns
  • 1 large onion, thinly sliced
  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • 1 teaspoon paprika
  • Vegetable oil for frying
  • Lettuce and tomato for topping

Instructions

  1. Preheat the grill to medium-high heat.
  2. Cook the bacon in a skillet over medium heat until crispy. Remove and drain on paper towels.
  3. In a bowl, mix the goat cheese, mayonnaise, lemon juice, garlic powder, and Dijon mustard until smooth. Season with salt and pepper to taste.
  4. In a separate bowl, soak the sliced onions in buttermilk for at least 30 minutes.
  5. In another bowl, combine flour and paprika.
  6. Heat vegetable oil in a deep skillet over medium heat.
  7. Dredge the soaked onions in the flour mixture and fry in batches until golden brown and crispy. Drain on paper towels.
  8. Form the ground beef into 4 patties and season with salt and pepper.
  9. Grill the patties for about 4-5 minutes on each side for medium doneness.
  10. During the last minute of cooking, place a slice of bacon on each patty and top with goat cheese aioli.
  11. Toast the hamburger buns on the grill for 1-2 minutes.
  12. Assemble the burgers by placing the patty on the bun, adding crispy onions, lettuce, and tomato. Top with the other half of the bun.

Notes

  • For a spicy kick, add a few dashes of hot sauce to the aioli mixture.
  • Substitute turkey or chicken for the beef for a lighter option.
