Description

A delicious Asian BBQ Salmon dish served with roasted Brussels sprouts, perfect for a healthy meal.


Ingredients

  • 2 (6-ounce) salmon fillets
  • 1 pound Brussels sprouts, trimmed and halved
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 tablespoon sesame seeds
  • 2 green onions, sliced

Instructions

  1. Preheat the oven to 400°F. Line a baking sheet with parchment paper.
  2. In a small bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger until well combined.
  3. Place the Brussels sprouts on the prepared baking sheet and drizzle with half of the marinade. Toss to coat evenly.
  4. Push the Brussels sprouts to one side of the baking sheet and place the salmon fillets on the other side. Brush the salmon with the remaining marinade.
  5. Roast in the preheated oven for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork, and the Brussels sprouts are tender and caramelized.
  6. Remove from the oven and sprinkle with sesame seeds and sliced green onions before serving.

Notes

  • For added flavor, marinate the salmon for 30 minutes before cooking.
  • You can substitute the Brussels sprouts with asparagus or green beans for a different vegetable option.
